Diabetic Oatmeal Raisin Cookies

I made these for Tevis and his Dad a few times because they are both diabetic & i wanted to try and get them some sweets they could eat without worrying too much. They were amazingly good, i need to make them again SOON! 

Diabetic Oatmeal Raisin Cookies

1 cup self-rising flour
½ cup butter
2 tablespoons white splenda
2 tablespoons milk
1 ½ cup Quick oats
1 egg
¼ teaspoon cinnamon
1/3 cup splenda brown sugar
½ teaspoon vanilla
½ cup dark raisin

DIRECTIONS

Preheat oven to 325 degrees
Mix the flour with the cinnamon
Cream the butter and both the sugars until fluffy. Add the egg, milk and vanilla. Gradually add the flour mixture.
Stir in oats and Raisins.
Drop by teaspoonful’s if small cookies are desired, tablespoons if larger cookies are desired.
Bake until golden brown, 10-12 minutes. Cool on wire racks. 

I recommend trying these they are good for ya too :) 


Mini Taco Pizza's

This was a hit at my house and my moms! 

Mini Taco Pizza

1 pound lean ground beef
1 envelope taco seasoning mix
1 (10 ounce) can refrigerated Pillsbury buttermilk biscuits   
shredded cheddar cheese
lettuce
Shredded cheese
Onion
Taco sauce
Tomatoes


Directions: Heat oven to 375 degrees. Brown ground beef in a large skillet, over medium-high heat. Drain grease. Add taco seasoning to the ground beef according to package directions.

Take each biscuit and smash into a nice flat round circle onto an ungreased cookie sheet (They should look like a mini pizza). Let dough sit at room temperature for 5 minutes. Take your cooked hamburger meat and put some on each little pizza. Place in oven and bake for 8-10 minutes or until lightly golden, Whatever the direction say for the biscuits. Then take out of oven. I placed little bit of cheese and placed back in oven for just a little bit to melt some cheese.

Once you take them out of the oven. This is where you add all your toppings. Serve and Enjoy!

Snicker Doodle Muffins

Snicker doodle Muffins

2 sticks unsalted butter
1 cup sugar
2 tsp vanilla
2 eggs
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cream of tartar
3/4 tsp freshly grated nutmeg
1 1/4 cup sour cream
2 1/4 cups all-purpose flour

1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*

1.Cream the butter and sugar until soft about 3 to 5 minutes. Add in the vanilla. Add in the eggs one at a time and mix until each is incorporated.

2.In a separate bowl, mix together the flour, baking soda, baking powder, cream of tartar and nutmeg.

3.Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions. Start with the flour and end with the flour. Scrape the bowl occasionally.

4. Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filled with the cinnamon sugar mixture. Roll the muffin around in the mixture until it is covered completely in cinnamon sugar. Place muffin into muffin tin. Depending on the size of your tins, you should get about 12 to 14 muffins. Bake them for approx. 20-22 minutes in a 350F oven or until they are golden brown.

*The original recipe calls for 1 cup sugar and 2 tbsp cinnamon, but this was way way too much for me. I ended up dumping maybe more than half of it.

This is not my picture but i wanted to show you what they looked like. My mom, Delaney and I made these muffins months ago and I wanted to share the recipe. It may not be the healthiest, but they sure were YUMMY! 


Snow Storm in March....

I hope this is the last snowfall of the winter. I am MORE then ready for spring weather! This snow storm started yesterday afternoon and didnt stop until this morning. It rained A LOT before then it was like raining snowballs, the snow flakes were so big and wet. We will stay home today not knowing what the roads are really like and being out in the country roads are always worse anyways. I hope everyone is enjoying their snow day.I am not sure how much snow they got in greenwood or Indy, but i think up north at home they got more. Now warm weather is coming so all this needs to melt and GO AWAY! Now i guess i should start working on some Homework! Happy hump day ya'll
